Carrot Scones

  • 3/4 cups 75gr wholewheat flour
  • 3/4 cups 75gr spelt flour
  • 2 tsp baking powder
  • 1/2 cup 120ml melted coconut oil (or other vegetable oil)
  • 1 shredded appel
  • 1 shredded carrot
  • juice from 1 orange

Method
 

Instructions
  1. Pre-heat the oven at 180º C.
  2. In a bowl add the flours, the baking powder, the shredded apple and the coconut oil, mixing with the hands, or with a mixer, until combine
  3. Add the shredded carrot and the orange juice and mix it until you get an uniform batter.
  4. In a baking tray, spread some flour and spoon the batter on the tray.
  5. Put it in the oven and cook for 20-25 minutes.
Instructions with a food processor like Thermomix
  1. Pre-heat the oven at 180º C.
  2. Shred the carrot 5sec/speed5. Reserve.
  3. Without cleaning the mixing bowl, shred the apple 5sec/speed5.
  4. Add the flours, the baking powder and the coconut oil and mix for 20sec/speed6.
  5. Add the shredded carrot and the orange juice and mix for another 20sec./speed.6.
  6. In a baking tray, spread some flour and spoon the batter on the tray.
  7. Put it in the oven and cook for 20-25 minutes.
