- In a bowl add the dry ingredientes: flours, coconut and baking powder and whisk.
- In another bowl add the non-dairy milk and the melted coconut oil and whisk to combine.
- Add the wet to the dry and stir until the mixture is uniform.
- Add the shredded carrot and stir.
- Let the batter rest while heating a pan in medium heat.
- Grease the pan with coconut oil (or other saturated fat), shape the pancakes as you like with the help of a spoon and let it cook for about 2 minutes each side.
Instructions with a food processor like Thermomix
- (if you chopped the carrot in the robot, you don't need to clean it)
- Place the dry ingrediente in the mixing bowl: flours, coconut and baking powder and mix 20sec/speed 3.
- Add the non-dairy milk and the coconut oil and mix 30sec/speed 5.
- Add the shredded carrot and stir with the spatula.
- Let the batter rest while heating a pan in medium heat.
- Grease the pan with coconut oil (or other saturated fat), shape the pancakes as you like with the help of a spoon and let it cook for about 2 minutes each side.
