Carrot Coconut Pancakes

  • 1/2 cup 65gr whole wheat flour
  • 1/2 cup 70gr plain flour
  • 1/4 cup 30gr shredded coconut
  • 1 1/2 tsp baking powder
  • 1 cup 250ml non-dairy milk (or your own choice of favourite milk, I use oat milk)
  • 1 tbsp coconut oil melted
  • 1 medium carrot finely chopped

Method
 

Instructions
  1. In a bowl add the dry ingredientes: flours, coconut and baking powder and whisk.
  2. In another bowl add the non-dairy milk and the melted coconut oil and whisk to combine.
  3. Add the wet to the dry and stir until the mixture is uniform.
  4. Add the shredded carrot and stir.
  5. Let the batter rest while heating a pan in medium heat.
  6. Grease the pan with coconut oil (or other saturated fat), shape the pancakes as you like with the help of a spoon and let it cook for about 2 minutes each side.
Instructions with a food processor like Thermomix
  1. (if you chopped the carrot in the robot, you don't need to clean it)
  2. Place the dry ingrediente in the mixing bowl: flours, coconut and baking powder and mix 20sec/speed 3.
  3. Add the non-dairy milk and the coconut oil and mix 30sec/speed 5.
  4. Add the shredded carrot and stir with the spatula.
  5. Let the batter rest while heating a pan in medium heat.
  6. Grease the pan with coconut oil (or other saturated fat), shape the pancakes as you like with the help of a spoon and let it cook for about 2 minutes each side.
